Sauvignon Blanc is harvested early in the season to preserve as much freshness and light acidity as possible. Harvesting takes place very early in the morning while the grapes are still dormant. This is done to maintain the wine's excellent acidity and to reduce the risk of bruising during transport to Warwick. Once at the press, the grapes undergo a gentle and calm pressing, after which the rich juice is aged in steel vats.
