The 2021 vintage in Languedoc is rated as excellent with a score of 92. The wines from this year are characterized as early-ripening and very approachable for consumption.
The Paul Mas winery is a true family estate that has been producing wines in the south of France since 1892. Over the years, significant investments have been made, and today, it boasts a state-of-the-art winery. Recognizable grape varieties are often used, and Paul Mas's motto is, "You must be able to taste the grape in all its beauty." And that's true of all Paul Mas wines: beauty and purity in their purest form. But that doesn't come easily, and hard work in the vineyards is essential. Over the years, we've gotten to know Jean-Claude Mas better, and today he produces some of the finest wines. He's also known as the Pioneer of the Languedoc because he consistently surprises us with unique grape varieties and the latest creations, like this red Que Sera Sirah Shiraz.

This red wine is made from two different grape varieties: Petite Sirah and Shiraz. Syrah, Petite Sirah, Shiraz... they're all the same, right? Not quite. While all these grapes produce big, bold, spicy red wines, one of them (varieties) is different. In short, Syrah and Shiraz refer to the same type of dark grape grown in two different regions. The vines are thirty years old and are currently producing a magnificent harvest, thanks in part to the climate. The vineyards are bathed in sunshine and a strong sea breeze, making them exceptionally healthy. Once the grapes reach full ripeness, they are harvested by hand in the morning. This is all done under the supervision of Paul Mas!

Wood aging for the red Que Sera Sirah Shiraz wine

The grapes arrive at Paul Mas in small crates to minimize the risk of damage. After pressing, a large portion is aged in oak for several months. Paul Mas uses American oak because he believes it's a better fit for the grape variety. And he's right, because this red Que Sera Sirah Shiraz has a powerful aroma of balsamic, spice, and cassis and violet aromas. The palate is truly powerful, with a full attack of black fruit accompanied by notes of spice, vanilla, and tobacco. Fine nuances of blackcurrant and chocolate are evident on the palate. What a superb wine, and for this price, we wonder how it's possible.
