This dessert wine, called Bacalhoa Moscatel Roxo 5 Anos, is truly exceptional. It's made from the best vintages—2004, 2006, and 2007—and matured in oak barrels previously used for malt whisky. It's made traditionally, according to DO Setúbal guidelines. Fermentation is briefly interrupted by the addition of aguardente, a grape distillate. The juice then remains in contact with the skins to extract more flavor. The must is then pressed, and the wine matures for five years in oak barrels previously used to mature Single Malt Whisky. The barrels are then placed in warm storage, where the warmth enhances the flavor concentration. The aroma reveals abundant notes of orange blossom, roses, raisins, and honey. The palate is rich and complex, with hints of dried fruit, roses, and honey. A good balance of sweetness and acidity is achieved.
