Our Review
Sweet, but not syrupy. A light floral hint makes it suitable for an appetizer like foie gras or pata negra, or a cheese board or cheesecake for dessert. The smaller bottle size is also convenient.
The grapes used to make this wine come from the first Sauvignon Blanc vineyards planted in Rueda 28 years ago. The soil, formed by its characteristic gravel, is very poor in organic matter and features limestone outcrops at the highest levels. Pruning is performed at various times to achieve a limited yield and high concentration. The emphasis is on harvesting overripe grapes. A sweet wine, surprising for its freshness and complexity. After several years of tasting and creating small batches, the winery succeeded in developing this Apasionado.

An exceptionally fine example of a Sauvignon Blanc wine. The grape is harvested when overripe, resulting in a sweet wine with a surprising and impressive freshness. Delicious as an aperitif and pairing well with main courses and desserts. It doesn't have a characteristic aroma for a sweet wine, but rather a unique combination of notes of vegetables and tropical fruit, freshly mown grass, and a hint of minerality. A pleasant and refined creamy mouthfeel, retaining the characteristics of the Sauvignon Blanc grape. The wine is highly intense and well-structured.
