The Neil Ellis Winery is located in South Africa and is named after its founder, Neil Ellis. Established in 1984, the company began as a small family business focused on producing quality wines. The Neil Ellis range includes a wide variety of wines from various regions. After harvesting the Cabernet Sauvignon grapes, they are crushed and subjected to a series of pumpovers in stainless steel tanks until dry. This is followed by maceration, after which the wine is lightly pressed. Malolactic fermentation takes place in French oak barrels. The wine then matures for 18 months in 25% new French oak barrels. This process contributes to the distinctive flavor and texture of Neil Ellis Stellenbosch Cabernet Sauvignon, with notes of ripe fruit, vanilla, and spice.
