2021 was an excellent vintage for the Western Cape in South Africa, with favourable conditions resulting in wines with good concentration and freshness. High-quality Pinot Noirs were produced, especially in cooler areas like Elgin.

11 months of wood aging for Seven Flags Pinot Noir
In Elgin, one of South Africa's coolest regions, lies the Paul Cluver Winery. At a considerable altitude, the vineyards enjoy the perfect climate right on the coast. Thanks to the surrounding trees, the vineyards remain protected, resulting in wines with finesse and freshness. The estate was originally used for apple orchards, but soil samples taken in the 1980s revealed that the soil was perfect for viticulture. It is a true family business, which benefits the wines. This is precisely why the wines are so successful and why the company has such a high reputation. Each family member contributes their own personality and respect for nature. This has made the estate what it is today, resulting in beautiful red and white wines. The grapes are harvested entirely by hand at peak ripeness. In the winery, the grapes are rigorously selected and sorted. A six-day cold maceration follows. Fermentation begins spontaneously, followed by the addition of special Burgundian yeasts. The grapes are pumped over three to four times a day during fermentation.
