The grape bunches are pressed under their own weight, producing must that then ferments naturally thanks to a specific substance found only in whole bunches of grapes. This fermentation-promoting substance wouldn't be present if the grape bunches were pressed according to the usual process. At the end of this natural fermentation process, the Novello wine is ready to be bottled and enjoyed.
The result of this Novello 2025 Fantini is a bright red wine with purple hues. The nose is fruity with hints of cherry and raspberry. Delicate notes of rose also emerge. On the palate, it's soft with fine tannins, wonderfully fresh and well-balanced. This wine pairs beautifully with cold cuts like salami and spicy cheeses. It also pairs beautifully with dishes featuring mushrooms, grilled chestnuts, and desserts with nuts, walnuts, or chestnuts.
