The term "Collio," which means "hills" in Italian, perfectly captures the essence of this region. The rolling landscape gives rise to diverse microclimates. The significant difference between day and night temperatures helps preserve the grapes' natural freshness. And that's exactly what we find in this Chardonnay. A fresh, lively wine with just the right amount of bite.

Renowned winemaker Franco Toros is always in the vineyards. He is the proud owner of the winery and constantly strives for the highest possible quality. The winery's origins date back to his grandfather, Edoardo, who laid the foundations in Novali, located in the heart of Collio Goriziano, in the early twentieth century. This area, also known as DOC Collio, is located in Friuli-Venezia Giulia, in northeastern Italy. A remarkable characteristic of this region is that some of its vineyards extend into neighboring Slovenia. With a total of 1,500 hectares of vineyards, primarily planted with white grape varieties, the region focuses on quality wines. The Chardonnay grapes are harvested at peak ripeness and taken directly to the winery. Here, the winemakers begin alcoholic fermentation in stainless steel tanks. Then, a third of the wine undergoes an additional phase, being transferred to oak barrels for aging. The wine rests and matures in these oak barrels for five months. This oak aging adds an extra dimension of complexity and depth to the wine. This approach results in a wine that beautifully balances freshness and depth, with a complex flavor profile that is both refreshing and inviting.

The Toros Chardonnay Collio is a straw yellow in the glass. The nose reveals delightful aromas of apricot, apple, and fresh notes of citrus and pineapple. A delightfully fruity bouquet that leaves you eagerly awaiting the taste. Thanks to the oak aging, the wine also gains real complexity in the aroma. The tropical notes are also evident in the palate. A wonderfully fresh wine, beautifully balanced with a lively character. The palate has considerable depth and, in addition to its freshness, also offers sufficient power. The harmonious combination of fruitiness, freshness, and fullness makes this wine suitable for pairing with a variety of dishes. Whether it's seafood, poultry, or other refined culinary creations, this Chardonnay complements and enriches the taste experience.
