Winemaker Fleur McCree has been making waves for several years now with her own vineyards in the Marlborough wine district. She produces three wines, one of which is Pounamu. Marlborough is a wine region with ideal conditions for grape growing. This is evident in the success of the Sauvignon Blanc wines from this region, in particular. The winery's adventure began in 2002 when McCree and her husband discovered an old sheep farm with 40 hectares of land. This site proved to be exceptionally suitable for viticulture. Sustainability is paramount, and they employ innovative methods aimed at achieving the highest possible quality.

The best Sauvignon Blanc grapes for Pounamu

The Sauvignon Blanc grapes for the Pearl of Pounamu come from two terraces in three different areas within the vineyard. The lower terraces contain stony silt soils with fine sandy loam. The upper terraces, on the other hand, contain more gravel. The grapes are harvested entirely mechanically in the early morning. This allows the grape bunches to be transported to the cellar as quickly as possible and prevents any oxidation. Once in the vinification room, the grapes are immediately destemmed, gently pressed, and then the juice is left to settle, allowing the coarser constituents to settle. The juice is then transferred to stainless steel tanks, where temperature-controlled alcoholic fermentation takes place for two weeks. This is followed by aging on fine lees to preserve optimal freshness and aromas. After several months, the wine is lightly filtered and bottled, ready to be enjoyed.
