For this rosé, we travel to the south of France, where the vineyards of Les 5 Vallées are located in the Languedoc region. It bears this name because the grapes originate from five different valleys. There, they grow in a constant and perfect climate, meaning abundant sunshine, allowing the grapes to ripen perfectly. The fresh wind that blows through the valleys and, of course, through the vineyards, provides the grapes with ample cooling. This gives this rosé its refreshing flavor without sacrificing its fruitiness. The soil structure in which the roots are buried consists primarily of clay, gravel, and limestone. This allows the plants to easily absorb moisture from the soil.

Once the grapes have reached their full ripeness, they are harvested at night, as this minimizes the risk of oxidation and damage to the bunches. The dew on the skins also contributes to the freshness of this rosé. But before this happens, the grapes are placed on sorting tables upon arrival at Les 5 Vallées. Only the finest bunches are selected for the press. The skins ferment for just twenty minutes to achieve the beautiful light pink color. The entire rosé is then aged for several months with its yeasts in steel vats. It develops peacefully and develops a fantastic flavor.

This Les 5 Vallées Rosé has a beautiful color, a gorgeous light pink. The color is a bit of a clue to its quality, as lighter rosés are usually fresh and very refined. This is certainly the case with this Les 5 Vallées Rosé, made from Grenache, Cinsault, and Syrah grapes. The first two provide freshness and softness, while the Syrah adds a fullness to the rosé. The aroma reveals a lovely bouquet of cherries, toffee, and flowers, developing into notes of soft candied fruit. The taste completes this Les 5 Vallées Rosé: ripe and round with fresh nuances of red fruit like strawberry and raspberry, and a touch of citrus.
