De jaargang 2018 in Victoria wordt gewaardeerd met een score van 87, wat wijst op een bovengemiddelde tot uitstekende kwaliteit. De wijnen uit dit jaar worden gekenmerkt als nog tanninerijk, jeugdig of langzaam rijpende.
The Old Vines Cabernet Shiraz is a red blend of Cabernet Sauvignon and Shiraz, supplemented with a small percentage of other varieties. Tahbilk has Cabernet Sauvignon vineyards dating from the 1940s to the 1990s, with the oldest of the blocks being the "old" Cabernet from 1949, planted on very fine red sandy soils. The result is an expressive red wine with underlying elegance.

Five generations of Tahbilk wines

Victoria is one of Australia's richest wine regions. Here, we find historic wineries producing elegant wines. Tahbilk is one such winery. Founded in 1860, the family-owned business continues its rich winemaking legacy to this day. The vineyards were purchased by the Purbrick family in 1925, and more than five generations have owned the estate since then. Tahbilk's vineyards are clustered along the banks of the Goulburn River. The vines are cultivated at an altitude of 134 meters on flat terrain. The soils are sandy loam with iron oxide content. The unique climate is influenced by inland waters, which have a cooling effect on the vineyards. The grapes are harvested by hand based on a flavor analysis. They are then transported to the winery, where they are destemmed, lightly crushed, and cooled to 12 to 14 degrees Celsius. They are then transferred to open vats with selected yeast. Fermentation takes place at a temperature of 25 to 28 degrees Celsius, after which the wine is aged for 18 months in French oak barrels.
