Golden-yellow depth, white flowers, ripe pear, and brioche come together in a full-bodied Limoux with a fresh, mineral finish. Chardonnay and Chenin Blanc are grown on two contrasting terroirs, ranging from clay-limestone to cool vineyards at an altitude of 300–500 meters near Campagne-sur-Aude. Barrel fermentation and 8 months of aging on fine lees give the wine its broad, layered structure, while the high altitude and oceanic influence provide tension.

Mediterranean ripeness and cooling influences from the west and the Pyrenees determine the character of the grapes.

  • Location / origin: The grapes come from two terroirs within the AOP Limoux, in the Languedoc in Southern France.

  • Altitude: The cooler terroir near Campagne-sur-Aude is located at an altitude of 300–500 meters, at the foothills of the Pyrenees.

  • Soil: One terroir consists of clay-limestone; the higher part around Campagne-sur-Aude is characterized by red clay.

  • Climate & influences: The Mediterranean climate here receives oceanic influences, allowing ripe fruit to coexist with well-preserved fresh acidity.

  • Vineyard & certification: The Chardonnay comes partly from the historic 3-hectare Saint-Estiennes plot. The vineyards have been organically certified since 2008 and have been affiliated with Biodyvin since 2022.

Wooden barrels, natural fermentation, and long lees aging bring together volume, aromatic depth, and fresh tension.

  • Harvest & selection: The grapes are hand-picked and brought to the cellar in 15 kg ventilated crates.

  • Fermentation: Alcoholic fermentation begins with naturally occurring yeasts in 400-liter barrels and large wooden foudres of 12–30 hectoliters. Malolactic conversion follows.

  • Aging: The wine is aged for 8 months on fine lees. Regular bâtonnage, or stirring of the lees, contributes to the full texture and layering.

The 2023 edition combines the volume of Chardonnay with the liveliness of Chenin Blanc.

  • 60% Chardonnay – Limoux: Forms the broad base of the wine and provides ripe fruit, floral aromas, and a round structure.

  • 40% Chenin Blanc – Limoux: Adds fresh acidity, tension, and length to the blend.

Pierre Fabre, coming from a family with more than 5 generations of winemakers, bought Château de Gaure in 2004, returning to his family roots. Together with oenologist Marc Bertrand, he produced the first wines from the renewed estate in 2005. From the contrasting terroirs around Rouffiac-d’Aude and Campagne-sur-Aude, the winery focuses on organically and biodynamically farmed vineyards, natural fermentation, and distinctive white wines from Limoux.
