In southern Puglia, the differences between day and night help to unite ripeness and freshness.
- Location / origin: San Marzano in the province of Taranto, in the Southern Italian region of Salento. The wine falls under the Salento IGP designation of origin.
- Altitude & climate: The cultivation area is approximately 100 m above sea level and experiences clear temperature differences between day and night.
- Soil: A thin layer of soil with a fine structure.
A short cold soak precedes the fermentation in wood.
- Processing: After destemming, the grapes remain in contact with the skins for several hours at a cool temperature. They are then gently pressed, and the juice is allowed to settle at a low temperature.
- Fermentation & aging: Fermentation takes place in French oak barrels. This is followed by 4 months of maturation on the fine lees, which are stirred weekly. This lees contact contributes to the creamy texture.
The base is supplemented with aromatic varieties from Puglia.
- Chardonnay – Salento: Forms the largest share and gives the blend volume and structure.
- Fiano – Salento: Contributes to the aromatic complexity and the full mouthfeel.
- Moscatello – Salento: Adds fragrant citrus and floral accents.
