The proximity to the sea softens the conditions in this southern wine region.
- Location / origin: The grapes grow around Brindisi in Salento, the southern part of Puglia in Italy. The wine carries the Salento IGP designation of origin.
- Altitude & climate: The vineyards are located at approximately 100 meters above sea level. Due to the influence of the sea, the area enjoys a moderate microclimate.
- Soil: The soil is shallow and predominantly sandy, with a medium-coarse structure.
Cool processing helps to preserve the delicate aromas.
- Harvest & skin contact: The harvest takes place at the end of August. After destemming, the grapes remain chilled in contact with their skins for several hours before being pressed.
- Fermentation: The juice ferments for 13–15 days in stainless steel tanks at 15 °C. This supports the fresh, aromatic character.
- Maturation: The wine then rests for 5 months in stainless steel, ensuring that the fruit and herbal nuances remain at the forefront.
The combination of fresh fruit and Mediterranean herbal character comes from a single grape variety.
