Casamatta is the name Bibi Graetz gave his wines and means "madhouse" in Italian. In Florence, Bibi's hometown, this term is used positively. Casamatta wine is a blend of white grape varieties Vermentino, Trebbiano, and Moscato. This combination creates a juicy explosion of flavors with notes of candied citrus, fennel, and minerals, along with a subtle saltiness.

Quality and authenticity in the wines of Bibi Graetz

Bibi Graetz is a leading winery located in the heart of Tuscany, Italy, founded in 1991 by Bibi Graetz. The winery is renowned for its exquisite wines, produced using biodynamic farming methods and traditional winemaking techniques. Situated in a beautiful location, the winery offers breathtaking views of the mountains and the Arno Valley. As a family-run business, Bibi Graetz emphasizes quality and authenticity in the production of its wines. Bibi Casamatta Bianco is made from grapes grown in the Capalbio vineyards, located in southern Tuscany in the Maremma region. The grapes are hand-harvested, destemmed, and gently pressed. Fermentation takes place in stainless steel tanks at very low temperatures for two weeks. This process preserves the wine's freshness. After fermentation, the different wines are blended and aged in tanks for three months before bottling. This aging process contributes to the development of the wine's flavors and aromas, allowing them to be even more pronounced upon consumption.

The refreshing and layered Bibi Graetz Casamatta Bianco

Bibi Graetz Casamatta Bianco has a pale yellow color in the glass. On the nose, the wine offers aromas of pear, lemon zest, orange, and peach, accompanied by subtle hints of blossom and mint. The wine has a fruity and refreshing taste with a light, coating texture. It is a layered wine with a good balance of fruity and floral notes. Bibi Graetz Casamatta Bianco pairs perfectly with seafood pasta dishes, where the fresh and fruity flavors complement the salty flavors of the seafood.
