The vinification process for Bibi Graetz Casamatta Rosso begins with the selection of grapes from the youngest vineyards, extending north from Florence to the south towards Siena. The grapes are then fermented in stainless steel tanks to preserve the wine's distinctive style. Fermentation lasts no longer than a week, and no maceration is added at the end of the process.
