Our Review

Bibi, good man. He paints his own labels; art/painting is his hobby. He took over winemaking from his father and then started making serious wine. His cult wines are, of course, the Testamatta (dialect for "crazy-head") and the Colore. This is more in line with the region where it originates: Chianti. It can age well, good balance. I would also prefer to drink this a bit older than usual (so say at around 8 years old).

The Soffocone di Vincigliata is the only Bibi Graetz wine named after the vineyard he currently frequents. This emphasizes the special bond between the wine and the vineyard where Bibi Graetz launched his wine project. The Vincigliata vineyard faces Florence and offers one of the most romantic views of the city. It was here that Bibi found the inspiration for the name and unique label of his wine.

Bibi Graetz is a leading winery in Tuscany, Italy, founded by Bibi Graetz in 1991 and known for producing high-quality wines. One of Bibi Graetz's vineyards is Soffocone, located around the estate in a densely wooded area belonging to the Chianti Ruffina region. The Sangiovese grapes from this area have a more rugged and unpolished character than the grapes from the Chianti Classico region. However, with climate change, the conditions for the Sangiovese from Ruffina have improved, resulting in even higher wine quality. The Bibi Graetz family business emphasizes quality and authenticity and continues to strive to produce wines distinguished by their unique character and flavor. Bibi Graetz Soffocone di Vincigliata undergoes natural fermentation with wild yeasts in large wooden vats, where no temperature control is applied. This fermentation lasts approximately 10 days, after which the wine is left exposed to the skins for a few more days to extract additional flavor and color. The wine is then aged for 18 months in large, old wooden barrels. This allows for a refined development of the wine without the oak notes overly influencing the flavor and character of the wine.

On the nose, this wine is highly aromatic with notes of ripe cherries and orange peel, followed by balsamic, earthy notes, spices, and leather. A slight floral undertone is also present. The palate is very expressive, with its aromatic character and earthy notes, giving it great complexity. The wine has good acidity and tannins, resulting in a long finish. A perfect wine to pair with red meat, game, or strong cheeses.
