The big name behind False Bay wines is Paul Boutinot of Waterkloof Winery. It was Paul who spent a full ten years searching for a unique vineyard where he could create beautifully refined wines with classic flavors. After all, he was a fan of great wines like Chablis, Paulliac, and Barolo. This was his inspiration, and he found his happiness in a small area on the southern slopes of Schapenberg, overlooking False Bay in the Cape. Here, the climate was perfect and the soils were of excellent quality. He had the vineyards planted between the Hottentots-Holland and Helderberg mountains, the highest point of which reaches a full three hundred meters. Moreover, the vineyards are located just four kilometers from the False Bay coast. This white wine also takes its name from this, as the influence of the ocean wind is clearly noticeable in this wine.
False Bay's old Sauvignon Blanc vineyard
The old vineyards are fully biodynamic, and this is clearly reflected in the exceptionally pure flavor. The soils, rich in limestone and mountain pebbles, give the bunches ample strength. The fresh ocean breeze that constantly blows through the Sauvignon Blanc vineyards has an influence, hence the name Windswept. The Sauvignon Blanc bunches naturally thrive in strong winds, allowing them to retain their natural freshness. The sun allows the grapes to ripen evenly, resulting in a top-notch harvest. In the glass, it glows brightly with a light yellow hue. The most beautiful aromas are released, stimulating all our senses with refined notes of green apple and lime, complemented by gooseberry and passion fruit.
