Since 1892, the Paul Mas family has been crafting the finest wines in the South of France. The winery is located near Domaine de Nicole, where the château in Montagnac is now located. The estate has since grown into one of the largest and most renowned wineries in France. With their extensive expertise, the Paul Mas winemakers know how to craft a perfect wine from every grape variety. This wine, from the Limoux region, is also a true delight for any wine lover.

The old vineyard around Limoux

The beautiful vineyards for this Les Faisses are situated in the best locations around Limoux. The Chardonnay grape thrives here and produces rich and full harvests. But the winery also owes this to the age of the vines, which now have an average age of 25 years. Thanks to the perfect Mediterranean climate, the grapes grow quietly and peacefully and are harvested by hand at perfect ripeness.

Wood aging for the Les Faisses Chardonnay Limoux

After harvest, this white wine is aged for a full nine to twelve months in oak barrels. Paul Mas selects both American and French barrels for this Les Faisses Chardonnay. The variety of oak types and the subsequent aging of some of the wine in new, unused barrels give this white wine its fullness. This gives the wine a refined and elegant aroma, with notes of tropical fruits, hazelnuts, and citrus, supported by a hint of vanilla. The palate is rich and broad, with abundant tropical fruit (pineapple), good acidity, and length.
