The Chardonnay grapes for this Ropiteau white wine come from beautiful vineyards in the heart of the Pays d'Oc. There, the grapes are exposed to all the influences of the sea, especially the cool sea breeze. This allows winemaker Nicolas Burnez to create a white Chardonnay that also retains a refreshing quality—a success he certainly achieved.

A much loved Chardonnay from Ropiteau

This much-loved Chardonnay from the renowned Ropiteau winery is one of our top picks. The winery has been around for 170 years and has an impeccable reputation for producing exceptional white wines. Only the very best is good enough, and they work very hard to achieve it. This 100% Chardonnay is harvested in the south of France. It is grown in clay-limestone soils influenced by the Mediterranean climate. The grapes come from vineyards in the Limoux region, one of the finest Chardonnay regions in the South of France. Such a full flavor and impressive balance are exceptional in this price range. After harvest, the grapes are destemmed, followed by a short maceration with skin contact, after which the grapes are gently pressed. Fermentation then takes place at controlled low temperatures. Malolactic fermentation was partially halted to preserve freshness. A blend of wines that have undergone different vinification methods allows the winery to achieve greater finesse and aromatic complexity. A third of the cuvée benefited from maceration in various wood-fired oak barrels, which adds aromatic complexity and a sweetness on the palate.

The aroma is a typical Chardonnay with hints of citrus, tropical fruit, and toasted nuts. The palate is mildly dry, with a lovely thick structure, plenty of tropical fruit, and a touch of lime zest. Its round, refreshing flavor makes it ideal for enjoying on its own, but it also pairs beautifully with dishes such as lobster, crab, shrimp, scampi, salmon, pan-fried sole, turbot, and many other fish. Chicken, turkey, and guinea fowl also pair well with this beautiful white wine.
