Maison Saint Aix elevates Provence white to a fresh, modern signature with AIX White. The grapes come from high-altitude vineyards in the Coteaux d'Aix-en-Provence region, with cool nights and chalky soils, creating tension and elegance. At Perfectewijn, we tasted the recent vintage and were immediately captivated by its pure style and vibrant character. What is sur lie aging in white wine? Aging on the fine lees, the yeast deposit after fermentation, for added texture and depth without oak.

Vineyards and region

The grapes come from Provence, France, in the Coteaux d'Aix-en-Provence appellation. The vineyards are situated at an altitude with chalky soils and receive plenty of sunshine with cool nights, allowing the grapes to ripen while retaining their acidity. Part of the estate lies on a plateau around 400 meters, where the combination of altitude and ventilation ensures aromatic precision.

Vinification and maturation

Early, hand-harvested in the cool of the morning to preserve the aromas. Light skin maceration followed by gentle pressing at a low temperature. Slow, cool fermentation in stainless steel followed by several months of maturation on lees for added body and a soft texture. No wood was used to allow the freshness, fruit, and minerality to fully express themselves.

Gives a crisp freshness with lemon peel and grapefruit.

Tasting notes and serving suggestions

Bright and aromatic with citrus blossom, green apple, ripe pear, white peach, apricot, and floral notes of jasmine and honeysuckle. The palate is crisp and balanced, with lemon zest and grapefruit, juicy melon, a hint of minerality, almond, and a hint of honey. The finish is clean and refreshing.
