Albert Bichot's sustainable wine growing

In 1831, Bernard Bichot founded the Albert Bichot winery in the Burgundy region of France. It has since grown into a renowned winery. The winery owns an impressive 107 hectares of vineyards and is currently run by the sixth generation. The winery is known for its sustainable vineyard practices, striving to minimize its environmental impact. The winery owns several vineyards in the Burgundy region, including Chablis, Meursault, and Gevrey-Chambertin. They produce a wide variety of wines, ranging from crisp and fruity whites to rich and powerful reds, each embodying the unique characteristics of the Burgundy region. The Chardonnay grapes grow on gentle slopes with calcareous and Kimmerides clay soils. When the grapes reach optimal ripeness, they are harvested entirely by hand and then pressed in the cellar. The juice is then transferred to stainless steel vats for fermentation, ensuring the wine retains its purity and freshness. Finally, the wine matures for another 10 months in the same barrels on the fine lees. This gives the wine more texture and complexity.
