The unique blend for Anna de Codorniu Cava Brut
Only the finest grapes are chosen for this Cava Brut. Chardonnay is known for its good acidity, freshness, and floral aromas. Combined with the traditional Parellada, Xarello, and Macabeo grapes, this creates a versatile wine with fruity aromas. Only the best is good enough for Codorniu, and that's why the grapes come from the best growing regions. The Chardonnay grapes are grown in vineyards with the most continental climate in the DO Cava in Lleida. This gives the grapes optimal concentration, low acidity, and a full body with delicious aromas.
Once the grapes are ripe, they are harvested at night to preserve their freshness. At the winery, they are destemmed and pressed. Fermentation with selected yeasts follows at a controlled temperature of around seventeen degrees Celsius. A second fermentation on the lees follows. The wine is aged on the lees for a total of at least fifteen months.
