The bunches grow in a climate characterized by the warmth of the sun, but also by the influence of the wind. The wind, which blows from the sea, provides the right cooling for the bunches. This allows the Sangiovese bunches to ripen slowly and evenly. The maturing process is a full and vigorous harvest, harvested entirely by hand. The bunches arrive in small crates at Antinori Pian Delle Vigne, where they are crushed and destemmed. The black juice is then aged for up to two years in the Antinori cellars.
