The extensive vinification process of Bibi Graetz Colore Bianco

Bibi Graetz is a relatively new winery, founded in 1991 and released its first wine in 2000. He decided to take a completely different path and become a winemaker in Tuscany. Like many outsiders, he decided to break every rule of modern viticulture and make wine according to his heart's desire. Now, more than 20 years later, his wines are a resounding success and are even known and loved worldwide. His wines have character and are very accessible. At an altitude of 200 to 500 meters above sea level, the vines for this Colore Bianco are planted on thousand-year-old terraces. The vineyards are planted in the local "Giglio style," intended to protect the vines from the wind and harsh winters. The harvest is relatively late so the grapes reach even greater ripeness. This, in turn, leads to a higher alcohol content and more aromatics. The grapes are harvested entirely by hand and brought to the winery in a few months. Here, the grapes are first destemmed and then pressed. Fermentation follows at low temperatures in stainless steel tanks. After 6 to 7 days, 70 percent of the wine is transferred to barriques, and 30 percent to stainless steel tanks, where fermentation is completed. The wine then ages for another 7 months.

The long wait is more than worth it. This Coloro Bianco arrives in the glass with a beautiful aromatic bouquet of peach, pear, blood orange, and white flowers. The palate boasts lovely minerality and delicious fruity notes. A beautiful balance between fruit and acidity. The fresh, fruity notes of peach and pear continue into the pleasant finish.
