The 70 percent Ansonica and 30 percent Vermentino composition gives this wine a balanced flavor and structure that perfectly reflects the region's terroir. The idiosyncratic Bibi Graetz from Tuscany

Bibi Graetz is a winery founded in 1991 and released its first wine in 2000. The founder decided to take a different path and become a winemaker in Tuscany. As an outsider, he decided to ignore modern viticultural rules and make wine his own way. After more than 20 years, his wines are highly successful and appreciated worldwide. They all have a unique character and are exceptionally accessible. The vinification process for Bibi Graetz Scopeto Bianco begins with the selection of grapes from vineyards on the islands of Giglio and Argentario. The grapes are hand-picked and carefully selected in the vineyards to ensure the highest quality. The grapes are then destemmed and gently pressed at a low, controlled temperature to preserve the aromas and flavors of the grapes. Fermentation of the grapes takes place in stainless steel tanks. The aging process also takes place in these stainless steel tanks to preserve the wine's freshness and fruitiness.
