In the winery, another rigorous selection takes place, after which the grapes are destemmed and gently pressed. Fermentation with natural and indigenous yeasts follows. For the smaller plots, fermentation takes place in open barriques, while for the larger plots, stainless steel tanks are used. After 7 to 10 days, the different plots are transferred to old barriques where they mature for 20 months.
