Currently, the fifth generation is at the helm of the beautiful Bis by Biscaye winery. In 2004, Emmanuel Biscaye took over from his father and has since made a significant contribution to these wines. He modernized various aspects of the business and planted his long-loved Chardonnay just south of Montpellier. The vineyard is located near the sea, giving this white wine its beautifully distinct style. The Chardonnay vineyard is now 14 years old and is producing a fantastic harvest. Father Biscaye was even surprised and patted his son on the back. "Classy grapes make a beautiful wine," he said.

After much work in the Chardonnay vineyard, this vintage has become one of the most important. The warm climate with abundant sunshine allows for unique ripening of the bunches. The strong winds slow them down slightly, allowing for a slightly later harvest. This, in turn, results in full-bodied and more powerful Chardonnay grapes. This eliminates the need for oak aging, and winemaker Emmanuel Biscaye aims to produce a pure Chardonnay.

Bis by Biscaye, a modern top-notch wine from the Languedoc. On the nose, this Bis by Biscaye white wine has hints of pear and yellow apple, citrus, a touch of vanilla, and some roasted hazelnuts. A beautifully typical Chardonnay, this Bis by Biscaye is rich and pure. On the palate, this white wine is soft and fruity with notes of yellow plums and ripe pear, but above all, it's invigorating with good, soft acidity. This wine is delicious as an evening wine but also pairs well with dishes such as pan-fried sole, smoked salmon, and various chicken dishes.
