To ensure the grapes develop smoothly, the vineyards are cooled by the wind and night. This helps them retain their freshness, a characteristic that is clearly reflected in the style of this Bis by Biscaye rosé. The grapes are harvested early in the morning and transported in small crates to the Biscaye press. This prevents damage to the bunches and preserves their freshness.
