Vineyards and region
The grapes come from Rheinhessen, Germany, in the Bingen appellation. The fruit comes from 35-year-old Pinot Noir vineyards in the Appenheimer Eselspfad, a limestone and sandy loam area. The slope is moderate to steep and south-facing, allowing the grapes to ripen optimally while retaining their freshness.
Vinification and maturation
Selective hand-picking with strict sorting. After destemming, fermentation with wild yeasts follows in open vats, with barreling carried out exclusively by hand for gentle extraction. The wine then matures for 12 months in large oak barrels and is bottled unfiltered. What does fermenting with wild yeasts mean?
