The Călușari Reserva Negru de Drăgășani – Cabernet Franc – Cabernet Sauvignon is a rich and powerful red wine from Romania. This unique blend combines the indigenous Negru de Drăgășani (56%) with Cabernet Franc (29%) and Cabernet Sauvignon (15%), resulting in a complex wine with depth and character.
Vineyards and vinification: tradition meets modernity
The grapes for this wine come from the oldest and best parcels of the Dealul Tiganului (Gipsy Hill) cru in the Banat region. The Negru de Drăgășani, a rare and indigenous varietal, forms the heart of this blend. After careful hand-harvesting, the grapes are destemmed and fermented for nine days in stainless steel tanks at around 28°C. Only the free-flowing wine is used for this cuvée. A portion of the wine (50%) is aged for two months in French oak staves with medium toast, adding subtle vanilla notes and structure. The wine is naturally cold-stabilized at -5°C for two weeks and bottled with a light filter, without fining agents, making it completely vegan-friendly.
Tasting notes: depth and refinement
This wine has a deep ruby red color. The nose is dominated by aromas of ripe plums and blackberries, complemented by subtle hints of vanilla and spice. The palate is full and juicy, with flavors of blackcurrant, plum, and blueberry, supported by a soft tannin structure and a touch of pepper. The finish is long and harmonious.
Serving suggestions: culinary versatility
The Călușari Reserva is an excellent accompaniment to grilled meats, such as sticky BBQ ribs, spicy stews, or a rich chili con carne. It also pairs beautifully with aged cheeses and spicy sausages. Serve at a temperature of 14-16°C for optimal enjoyment.
