Winemaker Gottfried Mocke strives for elegance and structure over overpowering fruit aromas, which is clearly evident in the Cap Maritime Coastal Chardonnay. After careful selection, the grapes are transported under refrigerated conditions to Franschhoek and whole-pressed. Fermentation takes place in both used wooden barrels and concrete vats, followed by twelve months of maturation during which the yeast is regularly stirred, a process called "batonnage." This creates a creamy, smooth texture while preserving the fresh citrus notes and subtle oak influences.
