After the great success of the MVSA Cava Brut, the Penedes winery now also has a Demi Sec. This is a slightly sweet Cava with flavors of ripe pears, peaches, and subtle hints of honey. But of course, it all starts in the MVSA vineyards, where the Macabeo, Xarel-Lo, and Parellada grapes grow on old vines. MVSA is the only winery in Spain with such aged vines that are currently producing very good harvests. But that doesn't happen by itself, and the winemaker is therefore always busy in the vineyard, convinced that this is where the foundation of a top-notch Cava is laid.

He has no less than five Muses this Mvsa

The beautiful Cava house MVSA is inspired by five muses: one who loves poetry and dance. But also one who's full of passion, a goddess of femininity, and of course, a muse who's always up for a party. Well, this beautiful, slightly sweet Cava is a party indeed. But before that happens, the grapes are harvested at ideal ripeness. A little later than for the brut variety, and the harvest begins in the middle of the night while the grapes are still dormant. According to winemaker MVSA, that's the perfect time. This prevents damage to the bunches and preserves their fruitiness. Once all the grapes are harvested, they are fermented separately. Then comes the winemaker's mastery, as he creates the blend, a difficult task during which the cava is tasted daily. Once the blend is absolutely perfect, the bottles are filled with sugar and yeast.

How do the bubbles get on a bottle of Cava?

Once the bottles are filled with wine, yeast, and sugar, they are placed in the MVSA cellars. The double fermentation in the bottle creates bubbles, and the cava is born. This aging process is called the "methode traditionelle," or the same technique as for French Champagne. After a long period, the bottles have built up sufficient bubbles and are ready to be popped open. The party can begin, and this slightly sweet version is a cava everyone will enjoy.

What does an MVSA Semi Seco taste like?

This Cava MVSA is slightly sweet, hence the name Semi Seco, a real treat for those who don't like dry Cava. The aroma offers lovely hints of ripe pears, peaches, and subtle nuances of honey and caramelized apples. The palate is pure, with a wonderfully soft mousse (bubble) and ripe notes of yellow fruit like plums, peaches, and apricots. There are also subtle nuances of honey and sweet apple.
