Cava Palau Semi-Seco

It's a gem, a palace, or whatever you want to call it, this Palau Semi-Seco. A cava named after a Roman palace that stood years ago on the site of the vineyards and winery today. It lives up to its name, as this is one of the finest cavas in Spain, especially at this price point. But it's not all easy, says the Palau family; hard work is required to achieve this result. Of course, it all begins in the beautiful Penedès region where Macabeo, Xarel-lo, and Parellada are grown.

The old vineyard is in beautiful condition, and the surroundings are fantastic. The hills offer a magnificent view of the vineyards planted in the best locations. The grapes receive plenty of sunshine, resulting in a ripe harvest that is naturally slowed by the fresh wind and cool nighttime. This slowing is necessary otherwise the grapes would ripen too hard and too quickly. At perfect ripeness, they are all harvested in the morning and pressed immediately upon arrival.

This Cava Palau Semi-Seco is slightly sweet, perfect for those who don't like dryness! This Cava Palau Semi-Seco has beautiful soft bubbles, thanks in part to the "mèthèque traditionelle" (traditional method). This means it's made in the same way as Champagne, and at this price point! Truly exceptional. The aroma offers a warm bouquet of ripe yellow fruit like peach, apricot, and lychee. The taste is slightly sweet, which is very pleasant—truly perfect! Beautiful flavors of yellow fruit complemented by a touch of honey and vanilla! This cava is also delicious with dessert!
