Palau's vineyards are located in the beautiful Penedès region of Spain. Here, the climate is perfect for growing the three grape varieties Macabeo, Xarel-lo, and Parellada. These nourish Palau's Cava, and the commitment to upholding this Spanish pride is evident in the rich flavors and aromas. But before we get to that point, let's return to the vineyard. The now mature vineyard has deep roots in a subsoil of loam, clay, and gravel, allowing the plants to easily absorb moisture from the soil. This is essential, as summer temperatures can be very high. The fresh sea breeze contributes to the gradual nourishment of the grapes, leaving this Cava with a wonderful freshness.
Made according to the Champagne Technique
When all the grapes are ripe, they are harvested early in the morning. Each grape variety is vinified separately and temporarily stored in steel vats. Now it's time for the Palau winemaker to showcase his expertise. After several tasting sessions, he creates the blend for this brut, and the Cava sees the light of day. To achieve the bubbles, the bottle is filled with yeast and sugar and aged for at least 9 to 12 months in Palau's cellars. This technique is also used for French Champagnes. Palau Cava develops its bubbles in peace and quiet, guaranteeing soft, rounded aromas and flavors.
What does Cava Palau Brut taste like?
This Cava Palau Brut is the dry version from this fine winery. A beautiful aroma of ripe yellow and white fruit complemented by subtle nuances of citrus and raisin bread. This Cava Palau Brut has beautiful soft bubbles, thanks in part to the "mètre traditionelle" method. This means this cava is made in the same way as Champagne, and at this price point!
