About the Domain

Château Ausone, named after the Roman poet Decimius Magnus Ausonius, has a rich history dating back to the 4th century. Situated on the southern slopes of Saint-Émilion, the estate has been managed by the Vauthier family for generations. Under the leadership of Alain Vauthier and his daughter Pauline, Château Ausone continues to strive for excellence, with respect for tradition and a focus on innovation.

Vineyard and Terroir

The Château Ausone vineyard covers just 7 hectares and is situated in a unique location with soil rich in clay and limestone. This blend gives the wines their characteristic minerality and finesse. The vineyard is planted with 55% Cabernet Franc and 45% Merlot, with vines that average 50 years old. The limited size of the vineyard allows for the utmost precision and care, resulting in wines of exceptional quality.

Vinification

The grapes are harvested by hand and undergo strict selection to ensure only the finest fruit is used. Fermentation takes place in temperature-controlled wooden and stainless steel vats, followed by aging for 18 to 24 months in new French oak barrels. These careful vinification processes result in a wine with depth, structure, and finesse.

Tasting notes

The Château Ausone presents a deep, dark ruby ​​red color. On the nose, the wine reveals complex aromas of ripe black fruit, such as blackcurrant and blackberry, complemented by notes of truffle, cedar, and subtle spices. The palate is characterized by a silky texture, refined tannins, and a perfect balance between fruity intensity and crisp acidity. The finish is long and elegant, with lingering nuances of dark fruit and a hint of minerality.

Serving Temperature and Gastronomic Combinations

Serve this wine at a temperature of 16-18°C to reveal its full aromatic potential. Château Ausone is an ideal accompaniment to rich meat dishes such as jugged hare, rack of lamb with herb crust, chateaubriand with béarnaise sauce, or Wagyu beef with fresh truffle.
