Since 1955, the Chaves winery has been a household name in the Rías Baixas appellation. They produce exquisite wines from varieties including the Albarino grape. It is a true family business that operates with great respect for nature. Founder José Chaves quickly realized he wanted his vineyards at the westernmost tip of the Atlantic Ocean. He inspired his family, generation after generation, to pursue the same dream. In 1986, the winery was among the first to release protected wines. This also helped create the famous Rías Baixas appellation. With great dedication, passion, and perseverance, the third generation is now at the helm. At peak ripeness, the grapes are harvested entirely by hand. This allows for rigorous selection in the vineyard itself, guaranteeing high quality. The grapes are transported to the winery in small crates, where fermentation takes place at a controlled temperature of 16 degrees Celsius. The wine then ages on lees for four months, giving this Cinco Islas Albarino a touch more complexity and creaminess.
