To nourish this large bottle of Cava, numerous bunches are needed, all harvested by hand. Each bunch is visually assessed to determine whether it is suitable for harvesting. The pure, unadulterated style of Clos Amador is the hallmark of this beautiful Cava. After the harvest, the blend is created, a unique process requiring considerable experience. After this, the Cava takes shape, as it is then made according to the méthode traditionnelle, in the same way as French Champagne. With yeast and sugar, the bottles are placed in the Clos Amador cellar, where they spend fifteen months developing their bubbles, or more accurately, their mousse. The aroma and taste of the Clos Amador Brut
On the nose, this Brut Reserva offers hints of citrus fruit, nuts, and a pleasant touch of aged white wine. The palate is incredibly smooth, with a very soft mousse (bubbles) and a rich flavor of apple, citrus peel, passion fruit, and a hint of white peach. The finish continues with a lingering citrus and white fruit aftertaste. This large bottle of Cava is delicious as an aperitif but also pairs well with many dishes, such as lobster, shellfish, or a delicious, fresh salad.
