This Semi Sec is very slightly sweet, a fantastic cava to pair with dessert or to toast with if you prefer a slightly dry wine. This Demi Sec is also made by the powerhouse Pere Ventura, a well-known name when it comes to Spain's finest cavas. The vineyard for this Clos Amador is situated somewhat lower than for the Brut and Rosé, simply because they want slightly riper grapes. The plots are located at an altitude of two hundred and fifty meters in the Baix Penedès and Central Penedès regions.

The grapes ripen perfectly, receiving ample sunshine. This allows them to ripen wonderfully and build up sufficient sugars, but to preserve their natural freshness, they are also cooled by the mountain wind. This makes the climate perfect for Cava and Demi-sec. All grapes are harvested by hand and rigorously selected to ensure only the finest bunches are bottled. The Clos Amador winemaker begins harvesting early in the morning to minimize damage to the grapes during transport. The grapes are transported in small crates to the press, where they await a gentle pressing.

Once the grapes are pressed and the juice is fermented, there are about ten barrels of still white wine. After this, the winemaker's art is to create the perfect blend. But leave that to Clos Amador, because this demi-sec Classic is a true sensation. The bottles are aged for a full twelve months in the cellar with yeast and sugar to gently develop the bubbles. This technique is called the méthode traditionnelle, the same technique as for French Champagne. Now we understand how beautiful this cava is. The aroma reveals light, sweet yellow and white fruit, a touch of honey, and a hint of fragrant flowers. The taste is soft, slightly sweet, and abundant with fresh fruit!
