The beautiful vineyards for Sauvignon Blanc Organic
Clos Henri Estate Sauvignon Blanc Organic comes from the enchanting Wairau Valley in Marlborough, New Zealand. This picturesque region offers ideal conditions for the grapes to thrive and is characterized by its unique character. The Clos Henri Estate vineyard is planted with relatively young vines, with an average age between 8 and 13 years. Despite their youth, a deliberate choice was made to plant them closely to increase competition among the vines and limit their vigor. This results in concentrated growth and maximum production of quality grapes.
When the grapes are optimally ripe, they are carefully harvested, and 85 percent of the grapes undergo fermentation in stainless steel tanks. The goal here is to primarily preserve the fresh character of the Sauvignon Blanc. The remaining 15 percent of fermentation takes place in old French oak barrels, which adds subtle complexity and texture to the wine. After fermentation, the wine is aged for eight months on the lees, the sediment of yeast cells formed during fermentation. During this period, the wine is stirred regularly, a process called batonnage, to extract more flavor and texture from the lees.
