The old Venis vineyard of De Stefani
The vineyards for this white wine are planted in the Fossalta di Piave region, where the old vineyard is called "Le Ronche." This name comes from the location of the vineyard. It's a unique part of Italy because the soil is very rich, with plenty of limestone, white clay, and some minerals. All of this translates to the grapes, as this white Venis is rich and minerally. In the vineyards, the harvest is pruned back because the winemakers at De Stefani want a strong harvest. And they certainly succeeded! At ideal ripeness, relatively early in the season, when the grapes still have some nice, refined acidity, they are harvested by hand.
