A tribute to Pinot Noir

The story of Dom Pérignon begins in 1823, when the already renowned company Moët & Chandon acquired the abandoned Hautvillers Abbey and its vineyards in the Marne department of the Champagne wine region in northern France. Just over a century later—in 1930—the now highly successful company Moët & Chandon secured the naming rights for Dom Pérignon from Mercier. The name itself goes back to the French Benedictine monk Pierre Pérignon, who played a key role in the development and refinement of bottle fermentation. The first champagne to officially bear the name Dom Pérignon appeared in 1936. This Dom Pérignon Rosé is a tribute to Pinot Noir. Craftsmanship is essential when working with this grape variety. It is made from 50 percent Pinot Noir and 50 percent Chardonnay grapes from the same vintage. The wine owes its color to the Pinot Noir, and thanks to nine years of aging on the yeasts, the flavor is very full. The weather was generally warm and dry, with some contrasts. There was a heat wave in the summer, but that heat was offset by the unusual coolness of August. This allowed the grapes for this Dom Pérignon to ripen exceptionally well, which has a beneficial effect on the flavor.

The smell and taste of Dom Perignon Rose 2008

The color is deep, with light amber and copper hues. The nose bursts with fullness and complexity. First, ripe fruit, and then, as the wine breathes and unfolds, fig and strawberry. A hint of guava, violet, and vanilla is revealed. On the palate, the Dom Perignon Rosé is concentrated and remarkably sharp, with a structured, rich fullness. The silky, spicy notes gradually give way to a mineral and salty finish.
