The old vineyards are located in the Tupungato Uco Valley in Mendoza. It's a unique area, and the vines are situated at an altitude of 1200 meters, one of the highest in Argentina. This makes the climate perfect for growing the grapes as organic grapes, as stated on the label. Cabernet Sauvignon prefers a cooler climate, so winemaker Jean Bousquet chose to plant the vines on the north-facing slope. Completely hand-harvested for this Cabernet Sauvignon
After a long growing season, which Cabernet Sauvignon requires, the grapes are harvested by hand in the middle of the night from the steep slopes of Mendoza. Why so early? This is when the Cabernet Sauvignon grapes retain their freshness and minimize the risk of bruising. The grapes are collected in small crates and taken directly to the press. The resulting juice is exquisite, and the entire wine matures for several months in the Domaine Bousquet cellars. This delicious red wine is given ample time to develop, aging in steel barrels to preserve its freshness and purity.
