The finest red wines from Burgundy undoubtedly come from the northern part of the Côte d'Or, the Côte de Nuits. Here, Pinot Noir grapes can ripen exceptionally well and develop a unique finesse. Besides this finesse, the red wines offer a beautiful balance between power and complexity. Around Nuits-Saint-Georges, particularly on the western side, lie the vineyards that produce the great Burgundies. The Domaine des Perdrix takes its name from this vineyard.
A tribute to history
The story of Domaine Devillard began in 1934, when the Marquis de Jouennes d'Herville decided to bottle his wines on the estate, first in Mercury. Since 2005, his grandchildren have run Château de Chamirey, supported by their father, Bertrand Devillard. This cuvée was created to pay tribute to its history. It comes from the oldest vines of the famous Premier Cru 'Aux Perdrix', planted in 1922, and covers a size of 8 ouvrées. The word 'ouvrées' is the unit of measurement used in Burgundy for the surface area of vines.
The grapes are carefully harvested and sorted by hand. Before alcoholic fermentation begins, a cold pre-fermentation takes place. Alcoholic fermentation is achieved with natural yeasts. After this, the wine is aged in traditional Burgundian barrels for fifteen months. Only French oak barrels are used for this. And the end result is certainly impressive!
