About the Domain
Domaine Tortochot, nestled in the heart of the Côte de Nuits, has been in the Tortochot family for four generations. The estate is known for its dedication to traditional winemaking methods and for producing wines that reflect the unique character of its terroir. The current owner, Chantal Tortochot, continues the family tradition with a focus on quality and sustainability.
Vineyard and Terroir
The "Les Corvées" vineyard is located in the Gevrey-Chambertin appellation, known for its chalky soils ideal for Pinot Noir. The vines are of average age, contributing to the wine's complexity and depth. Domaine Tortochot practices organic viticulture, resulting in wines that offer a pure expression of the terroir.
Vinification
The grapes are harvested by hand and carefully selected. After complete destemming, they undergo traditional fermentation in open vats with indigenous yeasts. The wine then matures for 15 months in French oak barrels, some of which are new, to develop structure and complexity.
Tasting notes
In the glass, the wine presents a deep ruby red color. The nose reveals aromas of red fruit, such as cherries and raspberries, complemented by subtle notes of licorice and leather. On the palate, the wine is balanced and harmonious, with expressions of small red fruit and soft tannins. The finish is long and refined, with a lingering fruitiness.
Serving Temperature and Gastronomic Combinations
Serve this wine at a temperature of 16-18°C. The Gevrey Chambertin AC Les Corvées BIO pairs perfectly with grilled red meat, game dishes, and aged cheeses. Its complexity and elegance also make it an ideal partner for dishes like roast duck or rack of lamb.
