When the Chardonnay grapes reach perfect ripeness, they are harvested by hand. Baron Philippe de Rothschild begins harvesting the grapes early, as they say, when the grapes are in deep dormancy. This preserves their freshness and prevents bruising during transport. After pressing, this Escudo Rojo Chardonnay is aged for nine to twelve months in Baron Philippe de Rothschild's cellars in Chile. Some of the oak used is new and has never been used, giving this white wine even more power and rich flavors.
