Eve and Michel Rey produce natural, honest white Burgundy in minuscule quantities from the finest terroir in the Mâconnais. From the vineyards to the cellar, they do everything by hand. And it's just the two of them. And that dedication is what makes their bottles so special. They don't have dozens of hectares of vineyards, but they work hard and, through clever winemaking, have become leading winemakers.

Organic wine growing by Eve & Michel Rey

Eve and Michel jointly manage the small but impressive 4.5-hectare wine estate in southern Burgundy, where they operate with great respect for nature. They also manage the Les Crays vineyard, which comprises approximately 0.3 hectares. Due to the small size of the estate, production is therefore low. The vines here date back to 1978 and are deeply rooted in a limestone and clay soil. They work as naturally as possible. And because they only have a few hectares of vineyards, they can also cultivate everything entirely by hand, using only organic treatments.

Manual harvest for Pouilly Fuisse Les Crays Chardonnay

When the Chardonnay grapes reach their perfect ripeness, Eve and Michel harvest the grapes themselves, entirely by hand. Thanks to the manual harvest, they can rigorously select the grapes right in the vineyard. The grapes are then transported almost immediately to the winery to preserve their characteristics. Fermentation follows, which is closely monitored and takes place at a controlled temperature. In other words, nothing is left to chance. The final wine is then aged for another 10 to 12 months in oak barrels. The result is a full-bodied Chardonnay from Les Crays. The nose is delightfully fresh with ripe citrus notes and floral aromas. The palate is pleasantly mineral, fruity, and beautifully balanced. The finish is a long, pleasant aftertaste.
