The tradition of the Fassati winery
Fassati is an ancient Tuscan winery in the Chianti region. It was founded in 1913 by the Marquis Fassati and named in honor of its founder. Since 1925, the Fassati winery has proudly held the title of "Pope Supplier," awarded by the Prefect of the Sant'Apostolico di Fassati. In 1969, the winery, managed by new owners, acquired several vineyards in the best production areas and began producing Vino Nobile di Montepulciano. The vineyards are all numbered and classified, allowing for better tracking and understanding of the vine and its potential. This philosophy continues to this day, respecting the ancient traditions that have characterized the area and the Fassati name.
Pasiteo originates from the Caggiole and Graccianello areas of the Fassati region, covering 70 hectares of vineyards in the heart of the Montepulciano hills. The vinification process concludes with malolactic fermentation at a controlled temperature, followed by a long aging period of two years in a vast cellar. Some of the wine is aged in 20-26 hectoliter oak barrels and some in small barriques of varying capacity and origin. The wine is then refined in the bottle for approximately six months.
The rich aromas of Pasiteo Vino Nobile Di Montepulciano
It has an intense ruby red color with violet highlights. On the nose, it offers a rich, delicate, and intense aroma of mature fruit, acacia, and vanilla honey, with floral and spicy woody notes. On the palate, it is complete, rich in blueberries, with pleasant hints of ripe plums and excellent tannins, demonstrating noble elegance. Delicious and exquisite!
