This Ferret red wine is made from 50 percent Cabernet Sauvignon and 50 percent Merlot grapes. With this delicious red wine, winemaker Dominique Ferret once again proves his ability to consistently produce high-quality wines. This Ferret Reserver is a full-bodied wine that strikes a beautiful balance with soft, ripe tannins.

Dominique Ferret is the owner of the small family estate Domaine de Guillaman in Gascony, located between Bordeaux and Toulouse. The vineyards are situated in southwestern France, where they primarily produce white wines. Ferret has extensive experience and is the sixth generation of the family to continue this tradition. His wines have a distinctive style and character and are consistently highly acclaimed. Dominique manages a total of 26 hectares of vineyards and, at forty, has over twenty years of winemaking experience. The slopes have ideal subsoil, calcareous clay. Thanks to the Vin de Pays regulations, he is able to achieve a good yield from the vineyards, averaging 90 hectoliters per hectare. This also allows him to operate the vineyard in an economically sound manner.

Modern vinification for Ferret wines

The vineyard is carefully cultivated, with thinning of shoots taking place to ensure a perfectly healthy harvest and optimal ripeness. Fermentation of the harvested grapes is also entirely modern. Ferret begins with a twelve-hour maceration on the skins. This is followed by pressing, followed by another very slow twelve-day maceration at five degrees Celsius. Only then does the actual alcoholic fermentation begin. These modern techniques produce a wine with considerable aromatic power. This effect is further enhanced by a tank aging of almost two months on the dead yeast cells, which also impart flavors to the wine. This results in a Reserve Rouge with a full aroma of ripe red fruit and a hint of chocolate. The palate is complemented by a powerful yet rounded flavor and soft, ripe tannins. It pairs well with spicy oriental dishes or served lightly chilled on the patio.
