Castello di Gabbiano, nestled in the heart of the Chianti Classico region, has protected the estate's grapes since its construction in the 12th century. The breathtaking 328-hectare estate, nestled amidst Sangiovese vineyards and olive groves on a hillside, has long been renowned for producing superb wine in the rich Tuscan tradition. Today, Gabbiano wines are crafted by winemaker Federico Cerelli, a native Tuscan with a passion for innovation. Castello di Gabbiano remains part of Tuscany's historic fabric as one of the region's leading wineries.
Fermentation with the skins takes place in stainless steel tanks for seventeen days at a controlled temperature of 28-30 degrees Celsius, followed by maceration with the skins for 27 days. The wine is manually pumped over four times a day and racked twice. Malolactic fermentation in new French oak barriques (225 liters) ends after four weeks. During this time, the wine is stirred regularly.
18 months of wood aging for this Bellezza
The wine matures first for eighteen months in new French oak barriques (80 percent) and then for another six months in the bottle before being released. Gabbiano Bellezza has had plenty of time to rest, and we immediately notice it. A beautiful aroma of powerful black fruit like blackberries and currants complemented by hints of herbs, tobacco, vanilla, pepper, and licorice. A truly overwhelming aroma that you can't shake. The palate is a true gem, with its richness and finesse, rich notes of cherries, jam, herbs, wood, nutmeg, pepper, and much more. The finish of this Gabbiano Bellezza is long and powerful with refined tannins.
